Course Description

This course provides an overview of the fundamental principles of human nutrition and their relevance to biomedical and public health research. Designed for PhD- and MS-level scientists from diverse disciplines, the course introduces key concepts in nutrient metabolism, dietary patterns, and the role of nutrition in health and disease across the lifespan.

Participants will explore how nutritional exposures influence biological systems, including metabolism, inflammation, the microbiome, and chronic disease risk. The course will also cover essential methods used in nutrition research, such as dietary assessment, biomarkers of nutritional status, and interpretation of nutrition-related literature.

Through lectures, case examples, and discussion of current research, participants will gain the foundational knowledge needed to understand and critically evaluate nutrition science and to integrate nutrition considerations into their own areas of research.

Learner Outcomes

When you complete these courses successfully, you will be able to:
  • Understand core principles of human nutrition and nutrient metabolism
  • Describe the relationship between diet and major chronic diseases
  • Recognize common methods and challenges in nutrition research
  • Critically evaluate nutrition-related scientific literature
  • Identify opportunities to incorporate nutrition perspectives into biomedical research

Microcredential(s)
